# Expert Tips:

01 -
  • They look genuinely horrifying but taste like pure heaven
  • Kids can help decorate, making it a fun family activity
  • You can make everything ahead and keep them chilled until party time
02 -
  • Freezing the balls for exactly 20 minutes prevents them from cracking when dipped in warm chocolate
  • The white chocolate must be completely melted and smooth but not overheated or it will seize
  • Work quickly when adding the iris or the coating will set too fast to adhere properly
03 -
  • If your coating starts to thicken while working, microwave it for 10 seconds to loosen it again
  • Keep a damp paper towel nearby to wipe off any mistakes with the red gel before it sets
