# Directions:

01 - Preheat oven to 425°F. Line a baking sheet with parchment paper. In a large bowl, combine flour, baking powder, and salt. Cut in the cold butter until the mixture forms coarse crumbs. Stir in buttermilk until just combined. Turn dough onto a floured surface and gently pat to 1-inch thickness. Cut into rounds with a biscuit cutter. Arrange biscuits on the baking sheet and bake for 12 to 15 minutes until golden. Brush with melted butter.
02 - If needed, pound chicken pieces to even thickness. Place in a bowl with buttermilk and hot sauce. Marinate for 20 minutes, or up to 4 hours refrigerated.
03 - In a shallow bowl, mix flour, cornstarch, smoked paprika, garlic powder, salt, and black pepper. Heat 1 inch of oil in a large skillet to 350°F. Dredge chicken in flour mixture, shaking off excess. Fry chicken 3 to 4 minutes on each side until golden and cooked through. Transfer to a wire rack.
04 - In a small saucepan, gently warm honey, hot sauce, and red pepper flakes over low heat for 2 to 3 minutes. Do not let the mixture boil. Set aside.
05 - Split the warm biscuits. Place a fried chicken cutlet inside each biscuit, drizzle generously with hot honey, and add pickle slices if desired. Serve immediately.
