Fresh Green Beans with Garlic (Printable version)

Fresh green beans sautéed with garlic and olive oil for a bright, crisp side dish bursting with flavor.

# What you'll need:

→ Vegetables

01 - 1 lb fresh green beans, trimmed
02 - 2 cloves garlic, thinly sliced

→ Oils & Seasoning

03 - 2 tbsp olive oil
04 - 1/2 tsp sea salt
05 - 1/4 tsp black pepper

→ Optional Garnishes

06 - 1 tbsp lemon juice
07 - 2 tbsp sliced almonds, toasted

# Directions:

01 - Bring a large pot of salted water to a boil. Add green beans and blanch for 3 minutes, until just tender and bright green.
02 - Drain beans and immediately plunge into a bowl of ice water to stop cooking. Drain again and pat dry.
03 - In a large skillet over medium heat, heat olive oil. Add garlic and sauté for 1 minute until fragrant, taking care not to brown.
04 - Add green beans and toss to coat in garlic oil. Cook for 4–5 minutes, stirring occasionally, until heated through and slightly blistered.
05 - Season with salt and pepper. If desired, drizzle with lemon juice and garnish with toasted almonds before serving.

# Expert Tips:

01 -
  • They stay impossibly crisp and bright green, like something from a restaurant kitchen
  • The garlic infusion happens gently in the oil, so you get flavor without any harsh bitterness
02 -
  • Dry your beans thoroughly after the ice bath or they'll steam instead of sauté and lose that gorgeous crisp-tender texture
  • Keep the heat at medium and watch the garlic closely once it hits the pan, because burned garlic turns bitter in seconds
03 -
  • Test your beans for doneness by tasting one during the blanch stage, not by the clock alone
  • Pat the beans completely dry before the final sauté so they develop those lovely blistered spots
