Deep Fried Marshmallows (Printable version)

Golden crispy exterior with gooey sweet center, these marshmallows make irresistible party treats.

# What you'll need:

→ Marshmallows

01 - 12 large marshmallows

→ Batter

02 - 1 cup all-purpose flour
03 - 2 tbsp cornstarch
04 - 1 tbsp granulated sugar
05 - 1/2 tsp baking powder
06 - 1/4 tsp salt
07 - 3/4 cup cold sparkling water
08 - 1 large egg

→ For Frying

09 - Vegetable oil for deep frying

→ Optional for Serving

10 - Powdered sugar for dusting
11 - Chocolate sauce or caramel sauce for drizzling

# Directions:

01 - Pour vegetable oil into a deep pot or fryer and heat to 350°F. Maintain temperature throughout frying for optimal crispiness.
02 - Whisk together flour, cornstarch, sugar, baking powder, and salt in a mixing bowl until evenly combined.
03 - Whisk egg and sparkling water in separate bowl until blended. Pour into dry ingredients and whisk until smooth, slightly thick batter forms.
04 - Pat marshmallows dry if damp. Skewer each marshmallow with fork or skewer, then dip into batter, turning to ensure complete coverage.
05 - Lower coated marshmallows carefully into hot oil. Fry in batches without overcrowding, cooking 1-2 minutes while turning occasionally until golden brown and crisp.
06 - Remove fried marshmallows with slotted spoon and drain on paper towels. Serve immediately while warm, dusted with powdered sugar and drizzled with sauce if desired.

# Expert Tips:

01 -
  • The contrast between that impossibly crispy shell and the warm, gooey center will ruin regular marshmallows for you forever
  • They come together in about twenty minutes flat but taste like something from a gourmet food truck
02 -
  • Room temperature marshmallows work best since cold ones can make the batter slide right off
  • The batter should be thick enough to coat but thin enough to drip off, almost like heavy cream
03 -
  • Sprinkle a tiny pinch of flaky sea salt over the powdered sugar for that sweet-salty thing
  • The batter works best when everything is ice cold, so keep the sparkling water in the fridge until the last second
